Make sure the oil in the pan is hot enough before adding the batter. Do not touch it until it is ready to be flipped.

The fruit adds moisture as it cooks as well, dust the blueberries with dry mix before you add them to the batter.

It's quite common for people to mess up the first pancake in the batch. It's really just the heat, but some people like to wipe out the first lot of oil and then heat up some more before cooking the first pancake. I personally believe that letting the pan warm up to expand the metal before adding the oil is what fixes the problem.

No you made dough, when you want batter. Add a tablespoon of melted butter, mix to the point you don’t see the powder, but it still has lumps.

anon, fruits in pancake batter is a good thing. My favorite is blueberries or apple or banana but you can go crazy and add anything pretty much except citrus but peel would be alright
