Beans are pebbles of mush. You've already got the thick liquid/sauce of chili itself, you've got soft onions and peppers, and you've got tender beef often more than one cut. Why do you need a mushy texture to go with the rest of the soft textures? What does mush add to a dish that is already loaded with thick soft textures?

I'm not against beans in Chili by any means but you're deluded if you believe this garbage. There's no flavor or texture that beans add that actually improve the dish at all. It's simply the least offensive addon you can add beyond the usual tomato, onion, peppers, and beef.

Jesus I didnt realize how fucking terrible chili was in other regions. Yes, if you can taste the beans in your chili then your chili is absolutely awful. Being able to taste beans means you're not even close to the right amount of spices and chilis. Again, beans are not adding any kind of flavor that will impact chili, they are solely there because they add a protein that does not impact the flavor and much like ground beef is able to soak up the flavors from simmering. That's all well and good! But you could easily omit them in favor of some kind of steak / roast cut, or even use pork shoulder for a tender stringy addition. Any of which would add a juicy tender texture that can actually improve flavors thanks to the natural fat content. You would choose beans here if you want to save money and the fact that what else would you put here? Corn, peas, potatoes? Beans are logically the best addition in such a case. But pretending you cant have a superior product by replacing them with other cuts of beef or meat is ridiculous.

I'm not out making a case against having meat in chili, but almost all the meat in chili is fucking shit cuts anyways, you don't eat a stew for the individual ingredients. Beans DO have taste and DO impart that into the chili, just like meat does. Perhaps not as pronounced if you've saturated your palate with giant blobs of fat every day, but it's there.

I'm not the kind of purist who would freak out and refuse to eat it if someone offered me chili with beans in it. But I find it incredibly weird how in love with beans almost everyone in this thread is. They're just beans. They really don't add much of anything. And the idea actual traditional chili is somehow incomplete without beans is ridiculous. The meat in chili already covers anything beans would be bringing into the equation with the exception of indigestible fiber.

>> No.12391318

>>12391022
You definitely could have some chili-esque bowl with beans where you're able to taste the beans in it. But that's not a good sign if your chili's so weak your filler ingredients are still noticeable. That's part of why there's this no beans in chili rule in the first place. It's either not doing anything to the flavor and just taking up space or it is doing something to the flavor in a way that's indicative of a weak chili.

>>12391022
I did not say beans have no flavor and would appreciate you not putting words in my mouth. I said that beans are too mild of a flavor to impact the end result of a good chili recipe. You should be using a full bodied spice blend involving cumin, oregano, garlic, onion powder, and smoked paprika to start off with. On top of that you have your dried chili mix which is usually atleast two types of dried chilis either powdered or made into a paste. Then you have fresh peppers such as jalapenos, poblanos, serranos, etc. You then have your veg flavors such as onions and tomatos (crushed and sometimes tomato paste). Finally you have adjunct ingredients such as coffee, beer, and/or unsweetened cocoa powder. All of this combined will overpower anything the beans people commonly add to chili by a long shot. Trying to act like only people with messed up palates cant taste the additional bean flavor only so highlights inexperience with the dish. It's one thing to prefer beans in chili because you like the texture and feel they absorb the flavor of the chili well - it's another to act like they are actually imparting a flavor of any kind of significance in the face of that many potent spices and ingredients.

And I'm saying that's false.
The fact they are so absorbent is huge part of the flavor they impart, you get little nuggets of soaked spices instead of over-spiced water, and it also reduces the sharp impact those spices have allowing other ingredients to come through.
The fact you're saying this shit tells me you've never bothered trying beans because you think it's for poorfags or something, because holy shit the taste is changed IMMEASURABLY by adding just a can of pinto. I've made chili with my uncle since I was 7. We've tried our recipe every which way practically adding anything we could just to experiment as local cookoffs dont require competition specific ingredients normally. And yes, pinto beans did not significantly change the flavor profile, and was outright inferior in flavor profile to an additional cut of meat. Pinto though was better than other beans in our chili (others had a tendency to actually mellow our recipe). I say these things because I've actually done them.
