I feel like cheddar is the most versatile. Different cheeses are good, but if I don't have the time or the money to get more it's a good all rounder or replacement cheese for most others, so that makes it my favorite.

America is in the process of dominating and redefining Cheese, the same we did with Beer and Wine.

I like a good dry blue Stilton cheese. The dreams are real, producing vivid, narrative dreams, often lucid and controllable. The same effect can be had in the US using identical profiles of fungi.

But a true certified Stilton is truly the King of Blues. It's crumbly, almost flaky on the tongue, but not dry, salty, with a nutty aftertaste.

My favorite part is the paste between the rind and the blue veins, although to truly appreciate it you need a through slice of the wheel.

Stilton. You'll thank me later.
