Julienne, which has absolutely fuck-all to do with julienning the cutting method. It's a stew of mushrooms and chicken in cream (you could use milk if you're a little bitch but it ought to be cream) and topped with grated cheese. Rich and decadent but oh god is it good.
Also if you're talking less "ethnic Russian" and more "from the country of Russia", there's a ton of ethnic cuisines such as Tatar/Bashkir cuisine, cuisine of the Caucasus regions etc.

Borscht. When done correctly borscht is elder god tier, but it turns my stool black and makes it smell like nothing from this planet.

There are many kinds of solyanka. If they have it on the menu, try it, but that's like saying date a girl. You should try one of mine, but I rarely make it, and you should probably try a small bowl if it's floating in olives, lemons, and sausage as it will likely rip your gut in half.

russian sour cream (smetana) is different than US style and is a much more universal condiment IMO. blini are different than pancakes, try them with smetana and caviar or green onion.

I presume I should elaborate one misleading thing about us Russians for better understanding.
When we say Russian in Russian we spoke about ethnicity, not nationality/citizenship.
So when you ask about Russian food we describe only pure traditional Russian ethnic food, not what we eat everyday.
E.g. we all love grilled meat on skewers (shashlyk), thats like de facto standard for countryside or summer house picnic but we dont consider that to be Russian traditional food cos the dish was adopted only in 19 century from Turkey or something.

Blintzes, pierogi, any type of pickled vegetables (go to south Brooklyn if you're in NYC, we have god-tier fresh pickled cucumbers everywhere), SMOKED FUCKING FISH.
The halvah's pretty damn good too.

I personally love sweet blini with condensed milk or strawberry jam or sour ones with, say, chicken in cream sauce.

Pelmeni - they look like vareniki here, but with raw meat filling.

Various pies. Sour pies with meat or fish is traditional way.

Salted herring. Salted herring with onions and boiled potatoes is traditional alcoholic food.

Also, sauerkraut. I don`t know how russian pickled cabbage differs with kraut one, but it`s a popular winter salad.
