I don't really like the testate of parsley. I put a bit of feta cheese in it to give it some more oiliness.
As for what kind I wasn't sure there was more than one... Its the family recipe. I'm using whole grain or "coarse" bulgur if it make s any difference.

Tabbouleh is good but not very satisfying on its own. Maybe have a grilled chicken breast with it next time. If you're going meatless just serve your tabbouleh over something like kale or spinach.
