After a few breakfast sausage tips. Bought some ingredients for a hybrid of what my local cafe makes and what is a more traditional US recipe, just wondering whether I should use dry or fresh sage? Is it one of those herbs like mint where its qualities change radically from fresh to dry and dry is actually better for some applications, or is dry just blanket worse than fresh?
