Whats the best way to cook a piece of meat up to temp and not overcook it?
I've had trouble with thick chicken breasts being the temp on the ends, but fails to reach the temp in the middle. How do I cook it properly so it's not over cooked?

What type of grill? Charcoal would be trickier than gas. Either way, you need to put it on a lower flame, and it'll take a long-ass time for the chicken breasts you're talking about. You could cheat and do it in the oven, then finish it on the grill though.

After following your instructions of low and slow.
This is what I did
I seared both sides for about 5-7 minutes, then I let it cook on indirect heat for about 30 minutes.
The camera doesn't really do it justice, It's nice and succulent and moist.
Also no it's not burned, thats just how my marinade makes it look.

Go to any thrift store, or walmart and they sell meat thermometers that you can poke into what you're grilling and it'll tell you exactly what temperature it's at and if it's ready. Follow instructions.
