So you're saying you hit saute mode, which only heats up yhe bottom of the thin nonstick pot, then after you put in your bacon, shallots, and onions fo a while you then put in your cubed root vegetables which are meant to sweat in even heat which it isn't. Then you deglaze a nonstick surface with red wine and add some broth. At what point in the stew are you to pressure cook it? Because after this you still have to add cream (which burns in an instapot) and brown sauce (which is later in the process). There is no time in a stew where it is completely unattended or in need of the next ingredient. Start to finish is 40 minutes and THEN you can just let it stew if you want. And don't even get me started on fresh made broth.

I have one and it's completely useless now that I have my dutch oven. It burned rice on the rice setting when I used stock. It burns anything with cream or dairy. The most it can do is steam vegetables and if you actually put them in a liquid it disolves them. If you try to make a roast it it, it does cook it faster. But if it's pulled pork it tastes like shit compared to a smoker and if it is a beef roast I'd rather have just used it in a stew to have more vegetables.

I've a Le Creuset pan like the one in OP. No regrets. I use it to make stew, bread, soup, anything. Shit's easy to clean and dishwasher resistant. I spent about $170 on mine and have had it for almost 9 years.

I have a Staub one like in the OP and love it. If you're going to buy a high-end one I think it's the best of the lot, above Le Crueset and the rest. Not really worth it above a Lodge one unless you have the cash to blow though.

They're great for bread, stews, braised meats, and a whole bunch of other stuff.

If you think there will be more than a few times you'll use it, sure, buy one... it'll last a lifetime. A heavy pot is not just useful for making a slow stew from stovetop to oven, but braising roasts, to baking one pot crusty breads. They're non-reactive because they are lined in a ceramic-like enamel, so okay for acidic tomato braises and stews, and can be infrequently used, so miles between than unlined cast iron and enameled.
No rusting between use, or sticky gummy oil slick. They are annoyingly heavy to clean, oh well. They need gentle cleaning and use, wooden spoons, silicone, deglazing, no harsh scrubber. If you use the slick surface, it gets a bit porous and less nonstick.

If you are patient, you'll find single pot deals at TJMaxx, Marshalls, and even closeouts at Macys. Free shipping online purchases are nice, because heavy as shit $$$ by weight. I've even seen these at Ollies and other closeout stores. Odd colors. Bad celebrity chef versions. Odd sizes. It can be an inexpensive start, however. Are you making food for 1? For 2? You might actually want something under a 4qt, little 2-3qt. There might be a reason, a family recipe you make just at the holidays, to get that orange color,, or pumpkin shape, or something specific for your hot spinach dip, or your favorite soup. They can the ones on sale.

Le Crueset and Staub are much more durable, but they still require special care. if I was in the market for a dutch oven, I'd probably go for a lodge, because if the seasoning gets fucked, you can always strip it and reseason.
