Saves like 2 minutes at most.

If you use his method, then you are spending your time dressing the board instead of rinsing/chopping vegetables and preparing a side salad or whatever you normally do while you wait for the steak to brown. You could kind of do this when the steak rests, but temperature loss from cutting before resting is also bad, so letting it rest excessively long will cause your steak to get colder and lose heat.

I'll probably try it again some time, but I'd say it's 80% as good as the classic way.

I guess if you want to be unique and special and whatever you can season the board so you feel productive as you molest your cut
