The really offensive thing is not "liking hot sauce", but talking about liking hot sauce. Also, I have a group of friends who know I like hot sauce, and they buy me some every Christmas. It's very kind of them, and some of the sauces are really delicious, but in December 2018, I got 11 bottles of hot sauce. I basically have to finish a bottle every month, and never buy my own, or I'll be getting it faster than I can eat it. I am currently on course to finish it off, but the ones I have left are the absolute napalm ones where you can only use one drop at a time, so I still worry that I might not manage it. I just put a couple of drops into a Bloody Mary (I drink Bloody Marys now, because you can put hot sauce in them as well) and my stomach hurts like I'd just eaten a car battery. And I have seven more months of this before I can do it all over again. I know this isn't really relevant to your conversation, but I don't have anywhere else to say it. I don't want to sound ungrateful for my Christmas present.

Can't argue with that. I've been into music my entire life since I'm a turbo autist with a mother who hated me so was forced into music, forced into piano & classical guitar. Picked up other instruments along the way. Been into prog rock, jazz, fusion & blues growing up and since I was a teen. Teach music in my spare time. Met a few good people along the way but I've met what feels like dozens of these people. They collect and latch onto anything for a year or two and "get into it" like a fad. They don't care, they're not in it long term and they suck the soul out of things with their disposable income because they want to brag before eventually selling or binning the stuff later.

Worst I met was a guy who got really into prog rock, three weeks in he not only owned a guitar but had bought himself a chapman stick. To set this up for you. In some amount of time he went from listening to prog rock to buying a decent bass, amp, audio interface etc to three weeks from starting his lessons with me and he's bought a multi stringed tapping instrument that I didn't own and play until I was in my teens. He had lessons for about 4 months after, didn't make much progress and never saw the dude again. He probably sold the stuck and all the gear or it's sitting unused in his apartment.

These people are a cancer and do this only to gain clout on social media. Your portrayal is 100% correct from my experience.

Only 2 weeks? What's your ph? I usually leave it be for no less then a month, ph is never over 4, one jar once had 4.1... after some vinegar added, I feel very sure it's shelf stable... Depends. Mine isn't really so much a sauce as it's a preserved puree. I use it for cooking more than sauce dumping. All I need is a little in soup or stir fry or just a dab on a taco for flavor town. The taste is great though, and honestly seems nicer to my gut than sauces from pepper extracts.

I read online somewhere that hot sauce can go for like 6 months, so in the summer when I started it I figured I'd bottle it at Christmas but then it was way past Christmas and when I opened the jar I had it in (I used one of those new rubber airlocks they make) the smell filled my kitchen. It actually smelled good at first but quickly changed into the smell of rotten yeast and habanero. Then I didn't feel like throwing it out because I'm lazy so I left it on the back porch to go toss into the woods for the animals to suffer through it but I forgot about it again so it sat out there for another few months. It was probably 10 months old when I finally tossed it and fuck did it reek. Fun experiment though
