Person who actually cooks here. This is what happens when you first start cooking chicken that's been pumped full of water. You have to cook off the water. Then, once it's all evaporated, the chicken starts to brown and cook properly. Pro tip: buy good chicken that's not pumped full of water. You get what you pay for.
