general tips:

* always use leftover rice from the day before that's been sitting in the fridge. fresh rice doesnt work too well.

* fry the egg first, then cut it up

* use high heat and a decent amount of oil.

Final note is that have a large pan and add generous amount of oil to cover the surface and make the pan very hot before adding the ingredients. (Rice is always first and then eggs and break it and add the rest for your liking)
Highly recommend Worchestire sauce or oyster sauce.

Just precook the mushrooms until most of the moisture is gone. Or slice them and salt them, and let them drain for a bit.

the rice doesn't have to be leftover, it's just something that was born from tradition and makes it idiot-proof if you aren't using a wok with a high heat burner (since fresh rice will get mushy when you cook it for a long time on a normal burner or electric). this is japanese fried rice I was making, in a japanese restauraunt, so it's different, but generally, speediness and proper mixing are what's required, and yes use day old rice if you don't have a butane burner, even then it's gotta be at least cold, if it's not day old. flavorings are light, just soy sauce, salt and pepper and some kind of fat (we used the fat infused soy liquid from making chashu). rest is whatever's in the pantry, but making sure the entire process of cooking takes no longer than 10 minutes is important, and seperating almost every grain of rice.

Fresh rice works fine if you make it using a 1:1.5 ratio of rice to water and you let it dry out a bit on the counter first.
