What are /ck/s go to chicken based recipes? I ask this primarily because I’m moving out soon and chicken is very cheap where I live. I usually go with grilled chicken on steamed rice and peppers but what does everyone else do?

For me, it's teriyaki chicken, chicken parm, and chicken katsu, the easiest ways to prepare chicken. I like the teriyaki chicken because you can prepare a marinade in the morning before work/school and make a delicious meal afterwards.

Get some spices or curry powder and make yourself a chicken curry. Serve with rice or some flatbread.

Chicken thighs. Skin off. Marinade (I've been using a lot of olive oil + soy + garlic + Sriracha lately). Bake in the oven for 30ish minutes, turning halfway through. If your going to use fresh garlic hold off adding it until the end so it won't burn.

Works for me.

I seriously don't like any of those dishes.

I put two chicken thighs in a covered metal pan, put some salt, pepper, and granulated garlic on it, throw it in the over at 400F for 45 minutes, remove, and do whatever with it. Still delicious even as a main meat. Nice and crispy skin.

I'm a man of mostly simple taste.

Neat recipe, saved, but why are you people not making your own stocks? I don't get it. It's literally free.

Are we talking about all chicken, or just chicken breasts? Because breasts aren't good for everything. Whatever, I'll just list some of my favorite chicken recipes, but a lot of these are for either a whole chicken (parted out) or recipes where you can use chicken thighs (preferable) or breasts (specific).
>Chicken Fricasee (whole chicken, parted out)
>Chicken Makhani (butter chicken) (chicken thighs, but you can use breasts if you really want to)
>Chicken Parm (breast)
>Nashville fried chicken (either a whole chicken parted out, or bone in thighs)
>Lemon and Rosemary roasted chicken (whole chicken)
>Chicken Piccata (chicken breast, but can use thighs too)
>Chicken Korma (chicken thighs)
>Zereshk Polow (Persian roasted chicken with barberry rice)
>Chicken with onions and pomegranate molasses (chicken thighs)

Those are the main chicken dishes I cook on a regular basis. Other than that, I'll marinate and grill some chicken breasts or thighs to use in salads, sandwiches, things like that. I don't eat as much chicken as I do other meats and fish.

I'm just saying to make a good stock you have to have all these ingredients already on hand, and then take the time to cook them, drain it, throw away the refuse, and store the stock. You can buy stock in any grocery store for $0.99 -1.99, at this point there's really no reason to go through all the trouble to make stock at home.

I dont know when it became popular to spend hours and hours and loads of ingredients to make stock. I've been making stock for 20 years, like my mother before me, and it only takes chicken bones and any vegetable scraps. Hell i even use a pressure cooker now and it only take 2 hours.

My go to baked chicken recipe.
Works with either boneless skinless thighs or tenders.
Dry ingredients - panko, pepper, habanero salt, cayenne pepper, garlic powder, onion powder. In whatever quantities your taste buds prefer. Experiment. Mix with a fork.
Preheat oven to 425.
Put a mesh wire rack on a cookie sheet and spray with pam.
Dip each chicken piece in flour, then olive oil, then the dry ingredients. Pat it on really well, but don't worry about it looking a little sparse. It'll fill out as the chicken loses moisture and shrinks.
Bake on the center rack for 21-22 mins.
Use this time to prepare your sides.
The chicken goes great with honey mustard dipping sauce but do whatever you prefer. Hope you enjoy.
