As of a week ago, I'm officially the owner of the bakery I've been working at for the past two years. It's been a whirlwind week, but I've got a second of down time, here.

Don't overbake it or underbake it. Glaze it with a light layer of margarine or oil.
>any advice for getting a sourdough culture started?
Mix flour with water and leave it out for a few days. Spoon the culture into smaller containers and refrigerate, use it to seed new sourdough cultures faster by adding it to flour/water.

Pay attention to this OP it's extremely important. A lot of small business owners ignore the bookkeeping aspect of business and more often than not this is what makes or breaks an enterprise. And if it's over your head hire a bookkeeper but for fucks sake if don't have a clue DO NOT do it yourself or hire your retarded slam piece to handle it; because more often than not you'll have creditors breathing down your neck.
