I make it all the time it's fucking easy and you have meals for a few days. But NEVER cook your meat in the curry. It's much better to rub it with your spice blend then grill it and combine at the end.

First of all curry isn't a spice, it's a mix. The absolute minimum to be a curry powder is cumin, corriander, turmeric, chili, ginger.

To make it more spicy you just add actual peppers or chili flakes.

My mix goes
Garlic
Ginger
Cumin
Cinnemon
Clove
Corriander
Fenugreek (must have)
Nutmeg
Thai basil
Pepper
Salt
Turmeric
Cilantro
Mustard
Chili flakes
Paprika
Onion powder

Fresh grind all your seeds, your cloves, and especially your nutmeg. Also protip: cream makes a better creamer curry than yogurt does by a lot.

This is one reason. And people think any Indian food is going to be completely overwhelming with spices. Indian buffets seem to be getting more popular though, since it lets people try a bunch of things that they're unfamiliar with instead of having to gamble with ordering off of a menu. There are multiple Indian restaurants within 5 miles or so of where I live now.

Not sure if every state publishes them but I can see recent health inspections for most restaurants by looking it up online. The one I go to only had a few minor issues in their last inspection. Any restaurant can be dirty though if it's managed poorly, the worst inspections I've read were for a fairly expensive Asian restaurant and a southern restaurant.

Just because it's called "curry" doesn't mean it can't be made improperly. Spices shouldn't be covering anything up. Used in the right amounts, they'll compliment food like any other ingredient, it's just easier to misuse them since they can be strongly flavored.

Escoffier has a few dishes that calls for "curry," but none of which are pressure cooked stews of mysterious meat and so much spice that you cant taste the things that are actually in your dish.
