Make sure your meat is a good thickness, 1" to 1.5" is ideal. Salt the meat the night before heavily then leave exposed in the fridge. Heat a cast Iron pan with no oil at the highest heat for ~8 minutes. Season meat with finely ground pepper and whatever spices you like, I enjoy some smoked paprika and cayenne. Pour in about a 1/4-1/3 cup of oil into the pan and add the steak(s) once smoking. Press the meat lightly into the pan so that the steak doesn't curl. If the crust is forming too quickly lower the heat on the pan to med-low. Cook to about 115 and tent under foil. Save the accumulated juices and spoon over top before serving.
