I find that breaking long pasta makes it easier to serve/eat. Instead of having a few long ass strands that are difficult to portion between several people without cutting up anyway, you have easily scoopable pasta that you can dish out.

Dry and fresh pasta don't have the same texture and are not interchangeable. Dry spaghetti is perfect for carbonara, aglio olio, etc. Dishes coated with a thin sauce. A more robust sauce like a ragu goes well with the softer, springier texture of a fresh tagliatelle.
