At least there's no watermark on it. But yeah, most recipes never include enough garlic. Or onion. Pasta with garlic and oil recipes say to use 2-4 cloves but it's more like 8-10. And recipes for beans will say use 1 or 2 onions for a pound of dry beans but it needs 3 or 4.

Anyone try to grow their own? I'm trying out some kitchen-gardening this year and got a few things, namely some pea plants and a couple mini-pumpkin plants that will go outside when they get bigger, and a fingerling potato that's sprouting. I'd love to grow some garlic cloves too but don't know how much space/time I'll need to produce a good amount.

1 lb beans, sorted and rinsed
4 onions, or 3 if they're a bit bigger than average
6 cups of water or stock
spices, I usually like pepper/cumin/coriander/clove
oil or butter, or some other kind of fat
vinegar or lemon, lime

Put beans, onion, and liquid in pot. Bring to a boil, boil for 5 minutes, lower heat and simmer for about 3 hours, adding more liquid if necessary but not too much because you want it thick when it's done. The beans should be soft and the onion will actually almost melt into the liquid and get sweet.

Add the spices during the last 10 minutes or so. Add your oil or butter, depending on your preference, probably 1/2 cup or up to 3/4 cup, the beans kind of need it since they're starchy. Then salt to taste. And add vinegar/lemon/lime or something acidic to balance out the fat.

Add your spices, salt, and acidic ingredient slowly and keep tasting until you get the right amount of each.
