Yesterday people here suggested me to roast broccoli and holy shit what a difference. Before I only roasted potatoes. Now I want to try more stuff.

What vegetables do you guys roast?
After roasting can they be put back in the fridge?

Squash. Take butterbut squash, skin it, clear it out and cube it, toss it with chopped fresh garlic, olive oil, salt, pepper and dried oregano. Let it sit for a few hours.

Toss that shit in the oven on a flat baking pan and cook medium high until it caramelizes on the edges and corners. I will often do this same recipe with squash, garlic and brussels sprouts (cut in half and tossed the same way as the squash cubes) together.

Roast fucking everything my man. You can definitely refrigerate leftovers, but I find they lose some of the crispness they would have had eaten fresh out of the oven. Still very enjoyable compared to basic-ass steamed veg.

You can literally take a head of cauliflower, cut it in half, put a little bit of olive oil and salt on it, then roast it in a very hot oven (cut side down) and it is incredible. Roasting is the way to go.

Veggies are fuckin' nice cooked in the oven.

I generally don't like carrot, but baking them gives them a pretty nice flavour. Red capsicum and pumpkin are also pretty top-tier.

Just throw in a tray of assorted vegetables and that makes a pretty nice feed.
