The teflon coating is pretty fragile. It breaks if the pan's too hot, if you use metal utensils, or if they're more than a couple years old. Not only does that destroy the nonstick properties, the coating will also enter your food and may cause health issues.

My cast iron used to have a layer of shit after I re-seasoned and wanted to use again.
Then I realized that after 'seasoning' you have to wipe off as much oil as possible, or else it creates too much of a layer and goes rancid.

Other than that, cast iron is serviceable. Like a Jeep.
