I went for a more classic burger today.
Maybe you gould call it a patty melt. Idk.
One quarter pound beef seasoned then smashed and slammed onto cast arn. Cooked medium well. With edam cheese metled on the patty.
Some bb arugala
Fresh tomato
Raw white onion
Homemade mayo
And mustard
All on ciabatta.

To take this from good to great I would replace the ketchup with some kind of mayo so the caramelization doesn't get overpowered and divide the patty into two patties with a cheese slice and maybe some of the mayo in between. I would also fry up some sliced mushrooms with the onions, but I realize some people just don't like mushrooms.

I make burgers a variety of ways, but the fave of my bf and others is the following:
Thin seasoned beef patties made from 80/20 grass fed beef, grated white onion, worcestershire, egg, salt&pep. Grilled on cast iron with bacon fat real quick, some sliced sharp cheddar. Slab bacon baked in my rub (smoked paprika, chili powder, mustard powder, black pepper, brown sugar) Lettuce, onion, tomato. Mayo, ketchup, mustard. On potato bread rolls.

Like what? Honest question, I like burgers but usually use potato rolls. Not awful but I feel like it’s holding my burgers back. I was gonna try brioche next time, but what do you reccomend?

That recipe looks pretty good, might try it next time. The potato rolls I use are just like peoperidge farm or something so maybe I can get better, just bad selection around here.
