You should salt them while they're sitting out, that way the salt does it salt magic. Kind of pointless to salt them right before you cook them.
3 hours? How thick are these fuckers? I let mine sit out for an hour, two hours max.
Also the best method is to flip every 15 seconds until you got a good sear going.
I also use an olive oil and butter mix, push the steak to the far side of the pan with the fat strip facing the edge and then swirl it around so that the oil gets on top and continues the searing process on both sides as well as getting that fat nice and melty.

Real chefs have access to real ovens, stoves, pans, broilers, etc. A home kitchen cannot compete. The reverse sear is the best way to home cook a steak.
Resting is a meme. Eat it fresh before you lose the crust.

Let rest salted and come up to room temp for about an hour. Cooked on 6.5 for 2 minutes each side then moved to a burner on 5 for another 7 minutes.
