It's pasturized at a temp of 300F (it's put in a vacuum chamber to be able to reach those temps since water is most of what milk is and maxes out at 212F) for a few seconds vaporizing almost all the probiotics milk has and any bacteria that cause spoilage. Then it's homogenized so it never separates.UhT milk is useless for making cheeses (outside of ricotta, paneer, labneh and queso fresco if you add culture to it) because of this if the curd coagulated enough to make the cheese it will be incredibly bland no matter how strong your cultures. This does give it a massive shelf life over raw milk
