make sauerkraut
buy some really high quality bread, nice butter, mustard, and high quality sausages and some smoked fish with slices of lemon, if you can get some nice fancy little potatos boil them then butter and dill, otherwise, don't.

then also make a fancy torte or a tart and serve it with a nice liqour or whiskey and coffee

there is nothing there you can screw up, except the desert and sauerkraut which make ahead of time. everything else is simple so you can actually spend time with him. And it will be delicious if you buy high quality stuff.

all the other dishes recd ITT can be a trainwreck if you don't have experience cooking them

>Königsberger Klopse (this is more austrian-hungarian)

Königsberger Klopse is deff nowhere to be found in Austria or Hungary. You are confusing pic related with Königsberger Klopse. Pic related is Semmelknödel made out of cubed kaiser buns soaked in milk, onion, parsley, egg and some seasoning, formed to balls and cooked in hot water, it contains no meat, usually served as a side dish to roast pork (like pic related) or goulash.

Königsberger Klopse contain pork and beef and is from east prussia.

Semmelknödel(kaiser bun dumpling) is basically left over food. You cut up the left over kaiser bun into small cubes and let it dry(you can also store it this way for weeks) and then we make leftover food out of the leftover food like pic related, bread dumplings with scrambled eggs, it's pretty good.

kinda. Nowadays you will almost always get traditional German dishes everywhere across the nation but back in Opas days most people had a certain regionally influenced portfolio of several dishes and relied on those.
Ofc there where some that everyone knew and where common everywhere but in general it's what the other anon said. Fish and vegs in the north, Dough, Potato and Meat south.

When it to comes to some "signature"-Dishes or full meals there are some which are/were popular in certain regions.
For example "Haxe and Schäufele" are some rather famous bavarian/franconian dishes, while in Hessia theres "Kasseler", "Ebblwoi" (Strong Cider) or Salzekuche/Schmierkuchen/Reibekuchen/Kartoffelkuchen/Zwiebelkuchen.

The last one is a good example for how some dishes have different names (and sometimes slightly different recipies) depending on region.
It even comes to a point where some villages have their own traditionl recipie for it.

I certainly don't know all typically german dishes and where they are popular. What I mentioned here is just a small part.

>>12224883
Passau is almost Austria so you could go with something classical bavarian or austrian (for Example Haxe,Schäufele or Tafelspitz).

Depending on how long he lived in Frankfurt you could go with something like "Handkäs mit Musik", which is more like a finger food, though I don't know if you'll be able to get the cheese, assuming you live in the US.
Another Idea might be "Grie Soß" with boiled potatoes.

Though I know the difference between Königsberger Klopse and Semmelknödel.
I confused Austro-Hungaria with East Prussia, since both is integral part of the german history. I simply thought Königsberg was southeast, instead of northeast. So geographical issue.
But since you mentioned it:
