Prepare navy beans from the night before
Use the ham bone, an onion, half a carrot, half a pod of garlic, some roughly chopped celery and boil it down to make a stock
Boil the navy beans
Fry bacon in a pan until crispy, remove, add cabbage, salt, pepper, and deglaze pan with lemon juice. Sprinkle a light amount of sugar to taste. Do not cook all the way, take off heat.
When the stock is done, take out the onion, carrot, celery, garlic. Puree.
Strain off the beans, add the stock to the beans. Mash the beans roughly.
Add leftover chunks of ham and the puree.
Add small chopped carrots
Simmer over low heat, season with salt, black pepper, and white pepper.
Once you get the carrots cooked it's done. Add some parsley for color. Spring onions can do well too.

This is an extremely hearty soup. It's usually best for the cold months, but it's a great leftover killer.
