I can see why you would want beef, because I could easily see the shrimp being overpowered by the brocolli and the rocket. But I would remove those veggies and add some grilled bock choy and fresh romaine in their place. Cause I think your dressing sounds better with either shrimp or pork. No on the tomatoes.

hmmm i never tried that. i like bok choy but less so than other leafy chinese greens because it always seems a bit boring and watery in comparison, kind of like the iceberg lettuce of leafy chinese greens. Looking at photos of grilled stuff too, everyone seems to grill them in halves. I always seperate each leaf when i cook it, because dirt hides around the base and it seems impossible to clean properly otherwise.
do you salt it to draw out moisture before grilling too?

and im just putting rocket in everything because i have a lot of it growing lol

In this case, when grilling it, it's more about the base than the leaf. You could actually cut most of the leaf off and add the fresh leaf to the salad separately, or instead of romaine. I usually get it on the smaller side, and it's easier to clean that way.

Another option might be grilled thai/chinese eggplant, or grilled king oyster/shiitake mushroom. You just don't want too many intense green flavors with shrimp.
