this sort of makes sense as greasing/breading a steak is something you do with exceptionally tough cuts - like chuck (which isn't even typically sold as steaks because they aren't very good to eat as steaks)
i'd go with a different sauce (than ketchup)

but doing that to a well marbled top sirloin?
to a fillet mignon? absolute sacrilege
what tastes good to you is what tastes good to you
but if you want to understand best-practices as determined by what sells
look to any successful restaurant on the planet that would never overcook a cut of meat that actually makes a good steak

mustard enhances the flavor of beef much better. ketchup is too sweet, steak sauce is designed for beef. salt and pepper is all you need really. mustard and steak sauce were probably used to cover the smell of meet that has gone off.
