Japanese knives are generally made of iron, vs the more common western stainless steel knives. Steel knives need more work to sharpen and hone, but hold their edge for a while. Iron knives sharpen quickly, but are softer and go dull faster. I believe there's also a difference in flexibility, with typical japanese cooking benefiting from a more flexible knife for removing fish skins for example.

I've used shitty Japanese knives, of course they exist. Any country can make shitty knives, that's not interesting. But why does Japan have 238947 different varieties of very good knives each with their own individual merits? Even something like a "vegetable knife" has like 487 different styles depending on how you personally prefer to cut your vegetables, and what kind of vegetables, and so on.

Meanwhile America has what. Bob Kramer, and some religious maniac with a Geocities site who makes one kind of knife and it has a stupid looking deer antler handle and it costs like $1900 and isn't even a good shape unless all you do is chop at deer legs.
