2 slices of bread on a dry pan on medium heat with 2 pats of butter on top. After 5 or so minutes of moving them around to toast evenly, spread the butter and flip them over. Put the fillings on the toasted unbuttered side and assemble the sandwich. Press down gently and let one side toast half way then flip and do the same repeating till both sides are almost finished toasting. Put a lid on the pan and lower heat until contents are melted.

Preheat pan on low. Butter (room temp) two sliced of bread and grab a slice each of muenster and colby jack. Lay your cheese on the unbuttered side of on of the pieces of bread and sprinkle with a pinch of garlic salt. Place tge other piece of bread on top with butter side up. Put it in the pan and let it crisp up a bit and allow the heat to work it's way into the bread and up to the cheese. Flip and repeat on the other side. Once done turn the heat up to medium and cook both sides to a golden brown. Use a sharp bread knife to cut the sandwich. The really important part is to use a hardy bread that's not going to be crushed.

I'm not American, but when I do some cheese sandwich, I put butter on white sandwich bread and put it butter side on a medium heat pan. I put one or two slices of cheese (Emmental or Edammer or Comté) and (Brie or double cream alike cheese). Fresh ground pepper (I know, I'm a monster) and an other slice of buttered white bread, plain side on the cheese.
I flip the sandwich, turn the head down, and wait till cheese is melted / smells good (usually, it happens on the same time).

I have a serious question tho. While looking for other way to do it, I found this video :

That's how I make a perfect grilled cheese. The cheese, bread, and toppings aren't too important. Here's one of my favorite grilled cheeses:

>jalapeño cream cheese spread
>sourdough
>roasted jalapenos
I also like to add tomato, bacon, or caramelized onions. I usually have a leafy green salad with some vinaigrette on the side. The bitter greens and sharp, acidic vinaigrette go well with the rich, cheesy sandwich.

Every time I make my own mayonaise, I use half egg and half mustard, and then oil to mount it until done. But that's in fact an old styled recipe half way to original Rémoulade.
So, yea, I guess that "real" mayonaise not only can be used, but will add interesting flavours to the sandwich. Take care to use an oil that support cooking.

Turn on broiler; set out cheese to warm up as broiler is heating (helps melt better later). Stick bread under broiler until it's toasted to your liking. Take out toast, put cheese on non toasted side, put back in broiler until cheese is melted. It's not "as good" as if you make it in a pan with butter, but still pretty good and you get used to it. Then ones cooked with butter seem much heavier. This way is faster, has fewer calories and no dishes to wash. It's important to use cheese that melts well, like muenster or monterey jack.
