I bought some bagged lamb marrow from my butcher yesterday.

Lamb expert here, that's probably what we call rubbarized, I wouldn't eat it. Definitely sat around for too long. Could lead to gastrointestinal bloating/leaking. You don't want leakage.

No matter what other people tell you, it is dog food. No matter how you cook it, the meat itself tastes like walking into an animal barn that's been lined with hay while your mouth is open.

Try to cook it yourself and prove me wrong, maybe it's a cilantro sort of thing. I've tried to make it so many different times, and it always smells and looks so delicious, then the meat tastes awful. And I've tried different kinds of tripe too (honeycomb, book, etc).

Mix salt, powdered garlic, bit of brown sugar,black pepper and thym and a bit of flour. Add one egg.
Make patties and cook until sides are brown. Can be used in burgers.
