Now this I can't hold against them, organ meat is good, especially fresh grilled thymus glands. Zalkhana-style food is great when drinking (though you'll die from horrible diseases if you eat it daily, and you'll get gout before you die).

It's actually the ancestor to the modern hamburger - hamburg steak, also called Salisbury steak. A meat patty in sauce with veggies.

Japanese cuisine is "sophisticated but simple" for the same reason Francois La Varenne's "nouvelle cusine francaise" is "sophisticated but simple": lack of access to non-domestic ingredients, particularly spices. In Japan's case it was due to the self-isolation the shogunate imposed, which cut off the country from the general Asian spice trade. This led to a reliance on presentation over content, given generally limited pool of available ingredients (religious dietary restrictions also applied).
Also, it is worth noting how a sizable percentage of the really traditional stuff is either pickled or quite strongly salted. The ice trade was never really workable in Japan, due to a combination of both high temperature and humidity. Unlike the Middle East and Europe, ice was not available outside the winter months, so preservation had to be based on salting and/or fermentation.

I've lived in Japan the past 3 years (military stationed here)

Japanese food is either horrible or amazing.

Yakiniku is fantastic, all you can eat meat that you cook yourself.

Okonomiyaki is alright, a little too different for my taste buds

Sushi is great but the nips like some weird shit so it really depends

Ramen of course is GOAT, I especially prefer the chain Ichiran.

Izakayas are good, cheap beer and food...just gotta be careful they like shit like chicken gristle and horse meat which I'm just not into.

Their take on American food is actually pretty good, they tend to like Hamburg a lot (hamburgers without the buns).

Can never go wrong with a bowl of Gyudon (basically Japanese McDonalds) from Yoshinoya or Sukiya.

7-11s, Family Marts and Lawsons are god tier if you go to one that's well stocked. Great foods there.

All in all, you'll enjoy Japan 400x more if you can read Kanji.
