You can have moist scrambled eggs that have some more texture to them and that you actually have to chew without them being overcooked. Gordon Ramsay's method is basically like an over easy egg but without the white to chew. I understand the appeal and made it a few times but it got old quick. Although it's just personal preference so keep enjoying it if you really like it and don't let anyone stop you.
