If they are freshly prepared, the fried cannoli sleeve is a crispy light pastry, and ricotta isn't overly sweet, so it's this nice and refreshing balance of texture and richness with light sweetness. Ricotta filling should have a bit of lemon zest or almondy goodness from amaretto if done well.

If a cannoli is done badly? It's oversweetened representation for modern tastes with hard little pieces of bad chocolate chips, so yea, a cloying mess with soggy shell that ends up being oily like a bad donut.
