Blanch thin fries, put in a waxy paper bag in the freezer for 2 weeks, open bag and leave in the freezer for 3 hours, opening the door every 2-3 minutes. Don’t wash your hands and grab a handful and throw into a fryer with 50:50 ratio of used/new sunflower oil. Take a teaspoon of grease and wipe it in the bottom of a tub and sprinkle fine salt in the bottom until it’s disgusting. After the fries have cooked at 400 for 2 and a half minutes, pull out and let drain for a few seconds and throw them in your disgusting bin and sprinkle more salt powder on. Let them sit for 2-10 minutes, varying your rest time with each batch. Plate and serve

I think they use russet potatoes for all their fries. I remember reading that they actually boil and mash the potato first, add a few flavourings such as oil and salt, then form them into fry shapes and freeze them. This way, everything is perfectly controlled and consistent. Is this true?

My stove has 9 heat settings and I do frozen fries on 6. If you're making fresh ones, probably do it on like 4 until they're fully cooked but not brown, then let them cool and refry at 6.
