Whatever method is used, for me, must leave the yolk runny or uncooked because heat will damage/oxidize the cholesterol in the yolk. You don't want oxidized cholesterol in your body. However, I don't eat eggs because of the egg lysozymes which raw or cooked can't be deactivated, and that wrecks your gut lining - but that's a separate issue.
