Why the FUCK do the shells keep sticking to the egg white?

boiled eggs can only be peeled perfectly by people with good hearts

It stopped sticking to it when I started putting eggs straight in the boiling water. I used to put them in cold water and then bringing it up to the boil.

Use a spoon to scoop them out of the shell, after cutting it in half.

I get annoyed with that method because the weaker shells are more liable to crack and then froth their innards everywhere

Not OP, but a lot of times my eggs will crack in the water when that happens, then I get egg guts everywhere in the boiling water. Will getting them to room temp first help with that?

>> No.12143519

>>12143507
Yes obviously if they are cold and you put them into boiling water the thermal shock is going to make them crack.

Room temperature eggs, put it on the spoon and dip it few times in the boiling water first, then put it in the pot. Also pinch of salt can help with that maybe.

Mine never stick and it's a very easy method, so I'll just tell you what I do. Get a pot boiling with a shallow amount of water, once boiling put in a steamer basket and your eggs, cover and put a weight on the cover so you don't lose too much steam, then set a timer for 9-12 minutes depending on how done you want them. Once the timer goes off move the pot to the sink and let cold water fill the pot for like 3 minutes - people say "cold shocking" the eggs gets the membrane to pull away from the albumin, and given that mine always peel easily I'm inclined to believe them. Once cold, tap the eggs on the counter, roll them against the counter to break most of the shell, then peel under a barely running tap. Make sure you tear the membrane and get it under the tap, the water will get between the membrane and the albumin and make peeling easier. I've heard that you want to use older eggs for hard boiling also, maybe let them rest in the fridge for a week or two if you always have bad results.

Well I do eat 6 eggs a day. Maybe that's the reason. I usually buy 3 dozen eggs a week. And I maybe skip a day.

You have to crack the shell a bunch with a spoon immediately after submerging them. The water must be very cold. The egg will shrink inside the shell and suck a small amount of water in with it. This works perfect every time.

It goes by the amount of water you put in the base. It comes with a little measuring cup so you can make soft, medium or hard boiled eggs. When it runs out of water a buzzer goes off. Good hard boiled eggs take about 13-15 minutes I think.

this is how i got my boiled eggs to stop peeling like shit.

put them in cold water and then bring to a boil. once its at a rolling boil take it OFF the heat and let them sit covered for 10 minutes. then put the eggs in ice water and shock them asap. let them cool and then peel by doing the rolling trick.

I’m about to rock your worlds. To prevent the shells from cracking just poke a little hole in the bottom with a pin or thumbtack. This lets the pressure escape

>> No.12144276

>>12144241

This anon knows what's up, rolling is key. You can feel when the membrane is separating from the whites. After that just get under the membrane and you should be able to much more easily peel it and the shell off.

Fresher eggs tend to stick to the shells, than older ones do. Also adding a tablespoon of white vinegar to the water always does the trick for me.
