Potato pancakes are really easy. I kinda impromptu'd it but my rough recipe was like

Half a pound cold mash
Half a cup of milk (like 125 ml I guess)
2 eggs
Tsp of baking powder
75g plain flour

1 Whisk milk and eggs
Add to mash,
2 Sieve flour and baking powder (mixed together) into mash
(I added some chives here as well I think)
4 Mix it until it forms a thick batter (add milk or flour until you get a thick consistency like scotch pancake mix)
5) dollop a table spoon into a pan with hot oil and butter

And bam makes about 10 pancakes

Grits are ground coarser than normal cornmeal, though you can get something similar with cornmeal if that's all you have access to. It just won't have the same texture and you'll want to keep an eye on them while cooking.

I like my grits cooked in coconut milk and flavored with maple syrup, desu. Serve it up with homemade berry sauce or fresh fruit. But I'm also an almost-yuppie from DFW so I might not count. They're pretty good. about 3 and half cups of coconut milk, half a cup of water to make an even four, a cup of grits, half a cup of syrup, salt to taste. Put the syrup in after you've actually cooked the grits.

Serve with w/e you want. Berry sauces are pretty easy. We had some decent quality berry preserves with this one.
