I grew up in New Jersey and the first time I saw sausage gravy was when I was in the marine corps, when I was in soi they brought out hot trays of sausage gravy(without the biscuits) and it was the most vile thing I’ve ever seen, a few weeks later they brought it out again and I ate it because I was so hungry and it was the most heavenly thing I’ve ever eaten. I make biscuits and gravy every sunday for breakfast.

Biscuits:
12oz AP flour
3oz unsalted butter
1 cup buttermilk
1 tsp salt
4 tsp baking powder
1/4 tsp baking soda

preheat oven to 400.
combine dry ingredients and throw them and the bowl in the freezer to get cold. we don't want the butter to melt in the dough, we want solid butter pieces in the dough to give us that flaky texture.
grate the butter into the dry ingredients, I like to stir it into the flour as I go, so that the grated butter doesn't stick to itself and form a big clump.
pop it back in the freezer for 15 min to keep everything cold
add the buttermilk and mix into a shaggy dough, then start folding it onto itself until you have a consistent disc.
back in the freezer for 15 min
at this point you can roll it out, cut your biscuits and bake, or you can do some more rolling and folding, but you have to keep that butter from melting, so you might have to chill the dough again.
I roll it out to maybe a 1/8-1/4 inch thickness, cut the biscuits, and take the scraps and repeat. the first ones you cut will always be the best, so if your some sort of sick fuck, you can cut them into squares with a knife to get more of the "first" biscuits.
bake at 400 for 15-25 min.

Gravy:
cast iron pan, hot
cook up some jimmy dean, or (my favorite) dice up some bacon and fry it. with sausage, I usually have to add some butter at the end if there isn't enough fat, and with bacon, I usually have to pour some of it off.
I'll leave the sausage or bacon in the pan, and sift some ap flour in to make a roux.
This might be sacrilege, but I'll use say, a cup of beef or chicken broth with two cups of milk, mix that into the roux, add a shitload of black pepper and salt to taste, and let it thicken up.
Sometimes i'll add a sprig of rosemary or thyme to the gravy as its cooking down, and pull it out when it's done.

To date, biscuits and gravy has been the biggest food-related disappointment in my life.

Not being an anglo, my only contact with the dish had been tv shows and random mentions of it on the internet. Since I love foreign foods of all kinds, I was always curious about trying it, but never so much as googled for it to know what it was for some dumb reason.
I had this idea in my mind that they had to be delicious, everyone always talked about them in such high regard and they're so ubiquitous, they had to be incredible.

Fast forward to a couple months ago, when I stumble by complete accident on the wikipedia page for it.
It's flour lumps with flour sauce on top.
The "biscuit" name (which in my language implies sweetness) apparently means "bread", and the "gravy" is instead pretty much a blander bechamelle.
The fabled "biscuits and gravy" I was so curious about ended up being nothing more than dipping your bread in milk like my grandfather did for breakfast, because of his post-war habits.

I should have specified in my post that I made some after my discovery, and that I liked them.
It was just a disappointment to discover that I already knew that the gravy would taste like (since it's the same as something we make here as a savory filling for lasagna) and that the biscuits were pretty much just bread.

It just went from "Oh man I wonder what they're like it must be amazing" to "I guess they're okay".

You can infer it pretty easily. There are a few common non-American quisines that are basically the same concept only with a different base meat/vegetable.
Like the dude above said, cream of mushroom soup is a decent analog for sausage gravy outside of thinness. It's prepared the same way, only with mushrooms instead of sausage.
Really any sauce that's made with the frond of a meat or vegetable with a flour and milk base will work.
but Sausage rules tho. Chorizo is great if you want it spicy.
