How do I deal with roommates that always leave dirty dishes out and don't listen when I confront them or at least they quickly go back to their behavior? I have to calm myself down every time.

You're trying to imply they care. If they leave dirty dishes about than just leaving them will do nothing. They'll either keep piling it up or just leave it. I live a with disgusting slob and they just leave shit, and will let it just sit instead of ever doing anything.

Are they your dishes? If so, wash them and remove them from the premises, or pack them in a box and tape it up and hide it in your closet. Keep only enough for you - a plate, bowl, set of silverware, pan - and keep that stuff washed after use and hidden in your room as well.

Are they not your dishes, but it's just cluttering up communal spaces? If you've mentioned it a few times and your roommates are shit about it, I agree with

Throw those dirty dishes on their bed where they can't ignore it and show them you fucking mean it. You can put them in a garbage bag or just full on dirty plate on the blanket depending on how fed up you are with your roommates.

The only thing is that you must make sure you're not open to easy retaliation. Lock your bedroom door or hide your nice things. If there's a landlord or campus housing counselor see if you can't get them involved.
