Spaghetti and meatballs from scratch should be sufficient to impress an “upstanding Christian” girl. Here’s my recipe anon.

Sauce
>28oz can of crushed tomatoes, preferably san marzano
>6oz can of tomato paste
>1 tablespoon EVOO
>4oz of a semi-sweet red wine
>1 tablespoon red wine vinegar
>4 cloves of garlic, minced
>1 small white onion, diced
>1 stalk of celery, diced
>1 small zucchini, diced
>1 sprig each of fresh oregano, rosemary, and thyme(dried works too)
>1 star anise pod
>salt and pepper to taste


In a big pot mix together the garlic, onion, celery, zucchini, salt, and pepper. Put it on low heat and cover, let the vegetables sweat for about 20-30 minutes, stirring occasionally. You don’t want them to brown, you just want the juices and sugars to come out, it should be very aromatic. Now add the canned tomatoes, wine, vinegar, and olive oil. Mix thoroughly and bring up the heat to medium low. Using some butcher’s twine, tie your herb sprigs and star anise pod together into a little bouquet, leaving a long piece of twine at one end to tie to the handle of your pot. This allows you to infuse the flavors of the herbs and fish them out of the sauce before serving. Simmer while covered for at least an hour, more preferably, and we’ll be finishing the meatballs in the sauce later.

Meatballs
>1lb of lean ground beef
>1lb of pork sausage
>1/2 a cup of panko breadcrumbs
>half a white onion, diced
>2 garlic cloves, minced
>2 eggs
>1/4 a cup of chopped parsley
>1/4 a cup of Parmesan cheese, grated off the block
>1/4 a cup of Asiago cheese, grated off the block
>salt and pepper

Heat a large pan on low heat and add a little olive oil to it, then fry the onions in it until they turn clear. You don’t want too much browning on them so be careful, we’re just getting the texture nice and soft. Mix the onions and the rest of the ingredients thoroughly in a large bowl. Use your hands like a man, boy. Use an ice cream scoop to portion out meatballs, then roll them in your palms to make them nice and round. Turn up the heat on that pan to high and sear the meatballs in batches. Do not crowd your pan, this will lead to poor searing. Get them dark brown on the outside, don’t be afraid of burning them. No oil needed, the pork will provide the fat. Add the seared meatballs to your sauce and simmer for 20 minutes before serving.
