Hey /ck/, I recently got a crock pot, and I want to make some stew. I've got about 3 1/2 pounds of pork loin thawing in the fridge that I'm gonna make into stew tomorrow. I'm planning on going out to the store to get some carrots, potatoes, and maybe some onions to go with it. I'm not sure what the appropriate ratio of meat to everything else is though.

At least twice as much veg by weight to start. That might sound like a lot but it'll lose more volume than the meat during cooking time and hardly anybody eats enough veggies. Add in parsnips, turnip, or rutabaga for some variety, and peas would offer some lovely color.
