Actually they did use them, until some retarded aristocrats decided that it was too peasant to use spices, so they cherished "the natural" taste of food.

thus, everyone wanted to be like those aristocrats so then everyone began to eat foods "for their natural flavor" and now its impossible to have a decent european meal without extremely high quality ingredients, which are extremely overpriced and circlejerked over because of MUH HISTORY
