I like to make a vegetarian papet vaudois sometimes. Instead of using a sausage, I will make seitan sausages and cook them halfway through, then finish cooking one on the potatoes and leaks and freeze the rest for later.
Seitan isn't hard to make, it's mostly wheat gluten, which despite the name is 14% carbs by mass and a decent source of protein. Most recipes for seitan sausage you find online will do well; I say use a papet vaudois recipe that doesn't use cream; it's dead simple as well, just leeks and potatoes in a pan.

Black beans and edamame are your best friends. Definitely dry roast the edamame in a dry pan fist though on there own; tastes more nutty that way.

I often use black beans instead of meat for fajita tacos. It's cheaper and still tastey.

Look at that image. There is not a single fat or obese person. All those people are healthy, thin and fit. It's because they have a good diet of curry and vegetables.
