Raccoon I trapped last season. This was after boiling it the first time before removing the fat.

Remove the paws/feet and fat. Start the quartering process before throwing it in boiling stock. After 20 more minutes you can bag and freeze to cook at a later date.

It's a LOT more work. If there is even the smallest piece of fat it will taste like shit. So you have to really know what you're doing

In the country coons aren't filthy animals. There are no dumpsters to raid out here. Just like pidgeons, there is a huge difference between city coons and country coons.
