What if I wanted that modification to my order the first time I went but I don't want it today? If the waitstaff assumes then they just fucked your order up. Yes, I know they mean well so there's no reason to be upset, but it's easy to see how problems can happen.

I guess that if you'd ordered the same thing with the same modification multiple times without ordering the "plain" dish then it would be more acceptable if they remembered precisely how you liked it. But if you only did it one time and they assumed you'd want it again then it'd be kind of a fuck up.
