Acidity and fat can improve bread, so it kind of makes sense, but the "proper" way to do it would be sourdough starter and egg/butter.

As a Chilean, I'd say yes. We also abuse avocado, putting ungodly amounts on hotdogs and sandwiches. I prefer homemade mayo, though, so I rarely eat out.
