i recently scored a garbage bag full of chicken wing bones from a mate. they've been outside in the cold all winter so they should be alright since it. what can i do with them? i was thinking like a soup

roast em in the oven until they're brown
deglaze the pan with some water
simmer them for a couple hours with diced onion, carrot, celery, bay leaf, or just whatever vege scraps you have and water above the level of your stuff.

You can go longer but it won't add much. I wouldn't bother skimming

strain, refridgerate, seperate the fat, and then reduce it by like half, or until it's really got good flavour. Freeze some if you've got a lot. Use it for cooking in general, making sauces, deglazing pans, make stew, gumbo, cook rice with it, whatever. Doesn't have to be a soup infact i don't personally see the point in soups most of the time.
