What do you think about fish sauce?

>> No.12070579

hey i got that squid one the other day
all i'd used before was golden boy
i think it's pretty good

I use it pretty often.
lime + fish sauce + chilli + garlic + sugar is a nice dressing or dipping sauce for grilled chicken or whatever

>> No.12070583

I like it, but Squid is bottom-tier. It's still okay, but it's by far the worst of the commonly available brands.

what do you recommend?
I thought squid was atleast better than golden boy. Maybe not better for cooking, but definitely more refined raw in dressings.

It's pretty good, but HOLY FUCK are there a bunch of horrible brands on the market.
If you don't get one of the few decent brands like in your picture, it's practically just bottled seawater. Polluted seawater.

>> No.12070894

>Squid is bottom-tier
Bullshit. It's good.
It may be peasant-tier within the brands that are actual fish-sauce, but there are hordes of pure garbage brands that claim to be fish sauce, but are the fish-sauce equivalent of gutter oil.
Stuff like >>12070870 or red boat are definitely better, but should be considered gourmet versions of fish-sauce that aren't used by most people. Especially red boat is almost a different sauce.

Like I said, Squid isn't horrible, it's just the worst of the common ones. Red Boat 40 is the best, but super expensive (Red Boat 50 is far costlier, but only marginally better than 40). This is the one I use.
Also good are Megachef, which is about twice the price of Squid, but seriously like three times better and Three Crabs. 3C goes on offer fairly often, so it matches Squid's price point every now and then. My mom used to switch between Tiparos and Red Fish AKA Ikan Merah.

To be clear, when I said I use Red Boat 40, I meant for dipping and general seasoning. Like table-side. For cooking, I use Three Crabs or Tiparos, whichever's cheaper at the time.
I wanna try Neapolitan fish sauce, but that shit's like $20 per 200ml.

fish sauce is fermented, it tastes nothing like fish boullion or fish stock. the two are totally different and are not interchangeable. Want to make a fish soup? Buy some cheap cuts, make stock from that.

You backpeddled there, and I gave you a way out here, but you can't leave it at that, do you now?

Myself? Beef and pork.
Can also be used on fatty fish, like salmon, or as a salad dressing.

>> No.12071113

do you red boat fish sauce autists use that good stuff for cooking, or raw in dressings and stuff?

Also, do you think it makes a tangible difference to plebian fish sauces, if you're just using a little of it?

Examples

>thai chicken salad with fish sauce & lime dressing (raw)
vs
>marinara sauce with a few drops fish sauce added (subtle cooked)
vs
>pad thai with fish sauce cooked into it and constituting the 'salty', so quite a lot used (fundamental cooked)

?
just curious because my impression going from tasty boy to squid was that I really am not sure if I can differentiate when I cook it. Maybe i'm just a palettelet. But the difference in salads was noticable. Maybe analogous to the difference between kikkoman as a dipping sauce vs a pleb chinese brand.

although tasty boy & squid are both 'nice', unlike pleb chinese soy sauce which is just not. And I'm sure there is a soy sauce equivelant of autism red boat sauce and that would be amazing as a dipping sauce but would it honestly make a difference in cooked food? I'm not sure.

RB40 suggestor here.
I use it more as a condiment. I use Tiparos or Three Crabs for cooking. I buy a small bottle of Squid at the cornershop if I run out of fish sauce because I thought I had another bottle but I didn't actually since the cornershop only sells Squid and this other brand I can't remember the name of.
