I use sake to make marinated soft boiled eggs to put in Ramen.

1 part Sake, 1 part Soy Sauce, 1 part Mirin. Ginger, Garlic Scallion.

Softboil the egg, peel and put in marinade for 24 hours.

That particular sake is trash. My in laws are from Japan and idk what sake my father in law serves in his restaurant but it's great. I bought some Gekkeikan thinking it would be the same but it tasted like mad dog 20/20 compared to the good stuff. The Onecup sake is pretty good but it cost per 2 glasses what Gekkeikan costs per bottle. Like anything, you get what you pay for. If Gekkeikan is your only experience with sake, you are missing out.

Japanese folks. I went to a hole-in-the-wall karaoke bar in Tokyo once with a friend. We were the only two non-Japanese people in the whole joint. Everyone was drinking either a Kirin, a Heineken, or a mixed drink made from sake that was the bar’s signature drink. Not sure what the name was because only the bartender really spoke English and he wasn’t that great at it, but he explained that it was sake, oolong tea, and apricot juice shaken and served over ice. Delicious and refreshing, but not very strong. Turns out the stereotype about Asians not being able to hold their liquor is true on average, we drank the whole bar under the table that night.

I'm not that anon, but I've noticed something similar. It's not that sake is taxed any differently that other kinds of booze, rather it's the case that the cheap stuff is unusually bad. I'd much rather drink bumwine than $10/bottle sake.

Where do you live?

I've had a very hard time finding good sake outside of a major city with a large Asian population. Otherwise I tend to find shit brands (Gekkeikan, Hakkutsuru, and Sho Chki Bai), or when they do have nicer brands the bottles tend to be old.
