I haaaaaaate slow cooked green beans. Lots of people love them, though. I’ve made them plenty of times, and understand why they SHOULD be good, but they really just aren’t my cup of tea.

Favorite veggie preparation is probably quickly roasted or sautéed asparagus. Preferably with bearnaise. Runner up would be broccoli, roasted until the florets start to char, topped with a bit of grated parm. Such a cool texture for that vegetable to have.

Exactly. I actually thought that I just didn’t like green beans until my first line cook job, when I had to sauté them with garlic, tomatoes, little white wine, and butter. Changed my life.

they're good roasted but sometimes i like them just steamed. if you steam them until they're soft they almost start to taste sweet, and i can eat like a pound of them with just a bit of vinegar.

I hated vegetables all throughout my childhood and then up until a few years ago because my parents always served me them raw and completely uncooked. It's interesting now to try different vegetable recipes and find out just how good they can be.

Roasted is top tier, but deep fried is god tier. No flour or anything, just dropped into hot oil with a splatter guard (they pop a lot), fry til dark golden brown, drain and salt well.
